Usually the classic Sherry cask is Oloroso. Manzanilla is a Sherry without oxydation process made in Sanluccar de Barameda. A large veil made by yeast flor on the top of the wine, protects it against the oxydation.
These such casks give iodine, mineral, yeast, flor flavors. It gives a little golden colour.
The freshness and the campher, anis rancio are very interesting. It could be considered as a light in a whisky.
A double edition in July 2025 has been purposed to the Korean market: Fino and Manzanilla influence. That was interesting to compare the very subtil difference.
